Easy as Arugula

Looking for an easy green to grow this spring? Like a bit of zest in your greens? Try sowing some arugula seeds this spring. The greens have a bit more zing in their bite than lettuce leaves and tend to be more forgiving to grow. Arugula greens might droop a bit if you forget to water them multiple days in a row, but will thrive with just a bit of neglect. (There were days last summer when I forgot to water my re-seeded volunteers, but it didn’t harm them too much in the long run.)

The plants are now taller than my three year old and strong enough to stand up to a preschooler's roughhousing. I might even get him to eat a few leaves one day.
